Hi there! My name is Charity Weaverling and I’m super excited to have you visit! A little bit about me… I’m currently living in Virginia with my husband and two young boys, but originally from a small town in southwestern Pennsylvania. Daughter of a coal miner and postal worker, my parents instilled a strong work ethic. They taught me the importance of taking care of others and working hard for what you want. The women in my family taught me how to cook and work in the garden around the age of nine and that is when I realized my true love for “real” food. Even with such a wonderful family life and modest upbringing, I knew it was time to leave small town life and move on to bigger things.
I spent the next five years working my way through school and in 1999, I graduated from Penn State with a degree in hotel, restaurant & institutional management. College was absolutely amazing with its hands-on courses, it well prepared me for a career to follow. Directly following graduation, I moved to Virginia and spent the next 17 years planning events from large conferences for thousands of people to weddings and everything in between. My favorite part? It’s a tie between the menu design & implementation including decor/themes and seeing the excitement and joy on my client’s face due to a successful event. I love to plan a party! And I love to help create memories.
Unfortunately being a military wife, my career has changed direction several times with different moves. We were fortunate enough to live in Italy for a few years and I learned so much more about cooking with fresh and new ingredients which I try to incorporate in my paleo cooking. With each move, came a new job where I was able to learn new menus and cooking styles of the various chefs that I worked with. My last job was at a beautiful resort on the point where the Chesapeake Bay and Rappahannock River meet and can I just tell you how amazing the seafood is there- especially the oysters. I was truly spoiled working in such an amazing location. But unfortunately, I had to say goodbye as we prepared for our final move.
In 2017, a few years after my husband’s retirement, he took a government position and finally after eight years and six moves, we are now in our forever location. I am currently at home taking care of our adorable and excitable two and four-year old boys. I’ve debated on whether to go back to work and it has been a tough decision as my career has defined me for so long and also the obvious, I love what I do!
SO, I’ve decided to take my love of food, cooking, entertaining and food photography and develop my first food blog. Why Paleo Pineapple? Because of health issues, I turned to a paleo lifestyle a few years ago and absolutely love it! The pineapple represents hospitality, warmth, family, entertaining, basically being there for others and making sure they feel welcomed. Combining my love of food, love for self and love for others, I’m hoping to connect with folks who want to lead a more healthy lifestyle and have fun doing it!
It’s taking me some time to learn WordPress and all about food photography but I’m determined to succeed! I hope you enjoy your time here and stick around for a bit. I look forward to making new friends and learning from you all and I promise I will have some exciting things to share with you too!
